I could eat Cowgirl Creamery’s Mt Tam Cheese daily.
But I can’t because I’d rather fit into my jeans…. but there’s always yoga pants…. hmmmm
Seriously though, it’s like a little slice of heaven. It is similar to brie because of it’s creamy softness, but extra buttery… and super cute!
Today, I topped mine with a date, walnut and sage mixture that compliments the earthy flavors of the cheese. You can either bring the cheese to room temperature or pop it in the oven to speed things up a bit. It only takes about 10 minutes in a 350 degree oven!
I think this would be fabulous to bring to your neighbor’s house for a weekend get together. Or, perfect as an appetizer before serving your dinner guests. Any way you ‘slice’ it, this is sure to be a hit!
Here are the products I used:
Cowgirl Creamery Mt Tam Cheese disc (Whole Foods)
This only takes a few minutes to whip up. You combine all the ingredients and top your warmed brie with the mixture and immediately enjoy!
Doesn’t get any more simple than that….
Especially when the result is so darn good…
Let’s make some!
- 2 Cowgirl Creamery (10 oz.) cheese rounds OR 1 large Brie round
- 1/2 cup medjool dates (about 6), chopped
- 1/2 cup toasted, chopped walnuts
- 10 leaves fresh sage, sliced thin
- 1 T. honey, add more if needed
- 1 T. balsamic vinegar
- Bring the cheese to room temp OR bake in a 350 degree oven for 10 minutes
- Combine the dates, walnuts, sage, honey and balsamic vinegar until well combined
- Place the cheese on a serving platter and top with the date mixture.
- Serve immediately
