That’s the best way to describe these easy summertime popsicles!
Cantaloupe is pureed with a simple mint syrup and frozen until ready to enjoy. My kids devoured these and it made me smile knowing they were getting in a whole serving of fruit, all while beating the heat.
This recipe will make about 8 – 3 ounce popsicles, which is the perfect size for little hands that struggle to keep up with the hot sun melting their treats.
I even added a few whole mint leaves to the puree after I poured into each mold. The result was a nice little surprise while enjoying the popsicle. An extra splash of minty sweetness to savor!

Here’s the recipe…
- 1 Cantaloupe
- 1 cup sugar
- 1 cup water
- Handful of fresh mint
- Combine 1 cup sugar and 1 cup water and bring to a boil over medium heat.
- Add the fresh, chopped mint leaves and let steep for 10 minutes. Let cool.
- Deseed and cut your cantaloupe into large chunks
- Add the cut cantaloupe to a food processor and puree for about a minute
- Add the minty sugar syrup and puree for a few seconds to combine
- Pour into molds and freeze for several hours. Add whole mint leaves if desired before freezing
